Made healthy oatmeal cranberry cookies today!

well… healthier… lets be real haha still has sugar

{Makes 5 dozen— but I cut the recipe in half}

Calories per cookie: 100, Protein: 2g, Fat: 4g

Ingredients:

1.5 cups whole wheat flour

1.5 cups bleached flour

2 teaspoons baking soda

2 teaspoons salt

3 teaspoons cinnamon

1 1/4 cups plain soy milk

1 cup applesauce

3/4 cup white sugar

1 cup brown sugar

4 cups uncooked oatmeal

2 eggs or 4 egg whites

2.5 teaspoons vanilla 

1 cup cranberries (or raisons)

Directions:

1. Preheat oven to 350 degrees F (180 C.)

2. In med. bowl combine the soda, flour, salt, and cinnamon.

3. In large bowl mix the soy milk, applesauce, sugar, oatmeal, eggs and vanilla. Mix well. Slowly add the flour mixture. Combine thoroughly. Gently stir in the cranberries.  

4. Drop by rounded tablespoons onto a ungreased baking sheet (I cover sheet with parchment paper to avoid sticking).

5. Bake for 15-18 mins. Cookies should be firm when tapping with a finger.

ENJOY!!! They are really yummy for a healthy cookie alternative!! xo
