A few weeks ago my friend, Escee Lopez dared me to make a healthier version of a white chocolate chip macadamia cookie. She probably thought it was impossible. Well, here’s proof that anything is possible if you put your heart and mind to it ;) Thank you for the little challenge and inspiration!

ALMOST VEGAN WHITE CHOCOLATE CHIP MACADAMIA COOKIES

1/2 cup agave sweetener
1/4 cup honey
2 sticks of Earth Balance Buttery Spread Sticks (vegan butter)
1/2 tsp vanilla extract
1 tsp apple cider vinegar
1 medium banana
1 1/2 cups whole wheat pastry flour
1/2 tsp cinnamon
1/2 tsp ginger powder
1 tsp baking soda
1/4 cup oats (optional)
1/2 cup white chocolate chips
1/2 cup raw chopped macadamia nuts



Directions:

1. Preheat oven to 350 degrees.

2. Add honey, agave, butter, vanilla, vinegar and banana to large bowl. Blend with hand mixer until butter is creamy - a little chunky is okay.

3. Add in the flour, cinnamon, ginger and baking soda. Set mixer blend on lowest setting just until the mixture gets thick. Then remove mixer beaters and hand fold the rest of the dough together.

4. Fold in the oats, chips and nuts.

5. Place dough in wax paper fridge for at least 30 minutes.

6. Bake cookies at 350 degrees for about 15 minutes. Let cool. ENJOY with some almond milk!

Everything in this recipe is vegan except for the white chocolate chips. I went to 2 stores (Whole Foods and Trader Joes) and couldn’t find them. I guess next time, I’ll just order them online so I can make a real Vegan cookie recipe.
