As promised, LOW CALORIE CINNAMON ROLLS!!!

I also happen to love anything and everything breakfast related, including cinnamon rolls. They are little bits of happiness rolled into warm cinnamony-sugary love. Seriously, I missed them with restriction, so I made my own. Simple enough, eh? My version made about 13 mini-rolls at 32 calories each.

  • 3/4 cup whole wheat flour
  • 1/2 tablespoon instant yeast
  • 1/4 cup egg substitute (or 2 servings of the egg replacer)
  • 1/8 cup unsweetened almond milk
  • 1 teaspoon granulated sugar
  • 1 tablespoon raisins
  • 2 1/2 tablespoons sweetener/splenda
  • 3/4 tablespoon cinnamon

GLAZE:

  • 1/4 cup powdered splenda (put in your food processor and blend for a bit to get a “powdered” texture)
  • 1 1/4 tablespoon fat free cream cheese, thoroughly softened
  • 1 1/4 tablespoon fat free butter
  • 1/2 teaspoon vanilla

Instructions:

  1. Microwave milk about 20 seconds and add yeast and 1/4 tablespoon sweetener and mix til smooth.
  2. In a large bowl, mix flour, milk-yeast, granulated sugar, a pinch of salt, and the egg til it forms a soft mass of dough. Cover with a towel and let rest for an hour.
  3. Preheat oven to 350 degrees and roll out your dough on a floured surface into a rectangle of about 1/2 finger thickness. Sprinkle with the remaining splenda, cinnamon, and raisins.
  4. Roll up carefully and cut into rolls that about are 1/2 inch thick (or to your liking). Let rest another 20 minutes, then put into a non-stick sprayed baking dish. Bake 20 minutes. In the meantime, prepare glaze by creaming the butter and cream cheese together. Then add vanilla extract. Pour powdered sugar in slowly.
  5. Once cooled add the glaze over top. 
  6. NOM NOM GUILT FREE. 

32.calories.per.cinnamon.roll. i know the people who count calories will love this.
